Elaboration and aging
Cold premaceration (4ºC) followed by controlled fermentation at a temperature of 26ºC.
In the elaboration the techniques of pumping over and pigeage are combined to extract the great personality of its grapes.
Long maceration and gentle pressing in a vertical press at very low pressure.
Aged for 16 months in French oak barrels and malolactic fermentation in them, which will end up harmonizing its aromatic expression.
Bottled without clarifying or filtering.
Bright ruby color.
Red berries, cherries, balsamic and fennel accompanied by soft notes of spices and orange blossom.
In the mouth, the spices are intensified with elegance and finesse, showing excellent depth, with silky tannins and a complex, long, fresh and smoky finish.
