Harvest and Elaboration
Manual harvesting in boxes of 10 kg, making a first selection of the best grapes in the vineyard and a second grain by grain in the winery.
Cold premaceration (4ºC) followed by controlled fermentation at a temperature of 26-28ºC.
In the elaboration, the techniques of pumping over and pigeage are combined to extract the great personality of its grapes.
Long maceration and pressing at very low pressure.
Aged for 16 months in French oak barrels and malolactic fermentation in them, which will end up harmonizing its aromatic expression.
Bottled without clarifying or filtering.
Intense cherry color.
Aromatic complexity of liquorice, violets, cocoa, balsamic, spices and black fruit.
In the mouth, concentration and intensity of aromas, elegance, silky and unctuous tannins, with great acidity that gives us freshness and final length.
