Varieties: 100% Black Listán.
Vineyard: Three plots del town of La Perdoma (formerly Migan): Tío Luis (1 ha.), San Antonio (0,8 ha) and La Habanera (1,4 ha). The first 2 centenarians and the 3rd of 90 years. Vineyards pruned in "crossed cordon", trena de las sarmientos, exclusive and unique method in the world. All in volcanic terrain with 30/50 cm. clayey and in height. Alcoholic degree: 12%
Preparation: Fermentation with autochthonous yeasts separated the 3 plots in concrete tanks. The Habanera ferments with the rapa, Tío Luis with half and San Antonio with 15%. Clusters all trampled with their feet. Subsequent aging for 11 months in French oak barrels.
Tasting note: Bright red. Low layer. Smoked, phosphorus and flint on the nose until it opens, due to the volcanic terrain. Good acidity. Red fruit. Bitter citrus touch. Species. Dried flowers. Light, subtle. Long and wide on the palate. Elegant. Saline touch. Very easy to drink. Production of 7500 ampoules. In the 2016 vintage, the first to be produced, it obtained 94 Parker pts.
Pairing: Very versatile: starters, vegetables, pasta, tuna or cod, spicy dishes.
