Simfonia en dolç is a natural black sweet wine from DOQ Priorat, made with Grenache and Carignan. Aging in roure barrels.
A wine that reflects the climate change experienced by vineyards in recent years. Grape with a high concentration of sugars, due to the scarcity of water resources. At the beginning of September the most optimal bunches were selected to make this natural sweet. In 2007, the yeasts transformed the sugar to 15,5% vol. of alcohol during fermentation. The rest of the sugar not processed by the yeasts, remains in the wine itself, thus resulting in a natural sweet, natural sugar and natural alcohol typical of fermentation. After a period in French oak barrels, it is bottled. Limited production of 800 bottles.

Simfonia en dolç is a wine that evolves glass. At first, aromas of dried fruits stand out: raisins, and figs. In evolution, balsamic aromas appear recalling aromatic herbs: mint-polyol, tea, cinnamon, followed by aromas of raw almonds. Remembering the marzipan.
On the palate it has a powerful entry. aromas like cassis, raisins and cocoa appear. Intense and long aftertaste.
