
There are a few things that make Ron Zacapa XO Rum unique. First, Zacapa rums are produced with sugar cane honey (fresh sugar cane juice is condensed and filtered) instead of traditional molasses. Second, the rums are distilled to the level del sea, but they age in the city of Quetzaltenango at an altitude of 7544 feet. Third, this rum is aged in a solera system using a variety of barrels aged between 6 and 23 years using sherry, bourbon and Pedro Ximenez barrels. The rum is finished in cognac barrels for an additional year. Note that the term "XO" has no meaning in the world del rum, but it is a clue that barrels of cognac were used.
