Biodynamic viticulture. Vineyard with spontaneous plant covers that give us biodiversity, fertility and life to the soil. We provide manure from our animals, composted in winter. We do short pruning in glass.
Use of herbal teas as phototherapy to minimize the use of copper and sulfur. Control of Lobesia Botrana with sexual confusion. Berry tasting and ripening controls before harvesting. Manual harvest.
Gravity entry into the cellar. At each stage, controlled atmosphere with dry ice. Slow pressing at low pressures. Static racking at low temperatures. First fermentation in stainless steel tanks at a controlled temperature, separating varieties and types of soils. Assembly, second fermentation in the bottle and minimum aging of 18 months in a rhyme position. Disgorgement date indicated on the back label.
