Gray bark, due to mold during ripening. Closed and slightly elastic paste, off-white in color, without penetration of the bark and absence of eyes. Intense mineral scent, with soft notes of goat's milk. Elastic and cohesive texture. Medium intense taste with a milky and slightly acidic entry, followed by mineral notes, with clean and pronounced sensations. At the end there is a nutty taste combined with a mineral aroma, and a sensation of medium intensity to toast, finished with a long persistence. As a whole, it is a personal cheese, with a special and markedly mineral aroma, and a clean and pronounced mid palate.
