Slow fermentation and oxidative aging in chestnut casks. The final product is obtained by mixing different vintages.
Vista: Coming from a process of a minimum of 4 years of aging in chestnut barrels, through del which achieves a characteristic ocher color, with orange and soft toasted tones with golden reflections. Fine and very persistent tear.
Nose: Initially, a certain alcoholic character dominates, as corresponds to a 15o liqueur wine. The oxidation process to which it is subjected gives it notes of roasted nuts and a touch of sweet coffee. In the background appear the aromas most typical of the variety, of ripe fruits such as peaches or apricots. Very sweet on the palate, due to its high sugar content. Medium persistence in the mouth, offering at the same time a slight freshness due to the acidity that it still retains. Sweet tastes are appreciated, such as nougat.
Boca: Sweet tastes are appreciated, such as nougat. In the aftertaste or on the palate it lengthens and varietal traces reappear del Muscat of Alexandria.
Pairing: Dessert wine. Especially indicated to accompany sweet pastry desserts, nougats, panellets, etc. It is also suitable with some musician desserts, accompanying toasted nuts of all kinds, raisins and dried figs.
