Viñas viejas de Cartoixà - what the Xarel lo variety is called in the area del Bajo Gaià - grown in organic farming and located in Nou de Gaià, municipality del Tarragonès, about 4 km in a straight line to the Mediterranean Sea. The sea breeze in the summer months begins to blow around ten o'clock in the morning and protects us from excess heat that allows a magnificent and constant ripening of the grapes, avoiding overripening of grapes grown in more inland climates. The soils are generally sandy loam with low fertility. Once harvested, the grapes are skidded and pressed. Stainless steel tanks are filled with the must and left to rest for 24 hours. The next day the clear must is separated and fermented in stainless steel tanks. The duration of the fermentation is 15 days at a temperature between 14 and 15ºC. After racking to clean the wine, organic concentrated must and yeasts are added to the base wine and bottled in cava-type bottles and covered with corks. The bottle will undergo the second fermentation or foam intake and will be aged for a minimum of 15 months. The sparkling wine carries the remains of the fermentation mothers in the bottle until the moment of consumption, since contact with the fermentation mothers maintains the aromas of the base wine and does not evolve, maintaining freshness in the mouth and nose. This is a cava made without sulphites or preservatives or clarifiers, an authentic BRUT NATURE !!!.
