Maceration in old clay jars without correction. After a slow spontaneous fermentation of 4 weeks, it remained in the same jar in contact with its own skins for 110 days. Discovery directly into a single barrel with manual stirring to induce natural decantation. Light filtration prior to bottling, wine made with minimal intervention and without any additive. Aged for 6 months in 3rd use French oak barrels and 66 months refining in the bottle before going on the market. Intense on the palate, with notes of pastries, orange peel and pollen on a citrus and herbal background. Present and friendly tannin that makes it long and deep.
