Intense cherry color. A complex wine, with aromas of ripe fruit, hints of minerality and toasted oak delicantly integrated ... a decidedly elegant character, full-bodied, very balanced and with excellent acidity.
We recommend it with grilled or pepper steak or lamb meat, with a medallion of pork in port with figs (religion aside), rabbit huntress, beef civet with apricot coulis and fruits del forest, octopus mosaic with black sausage ....
Aging:
12 months in new and 1 year old kosher French barrels (228l);
Medium and light roast
Subsequent aging in tank for 3 months before bottling
