This wine is a monovarietal of Verdejo (100%), the grapes come from old vineyards with a very low yield.
As for the production, it is fermented in French oak barrels, new and one year old, from various cooperages. After this time, José Pariente fermented in barrel stainless steel tanks are unhinged, in which they remain for five more months.
