Don Zoilo comes from biological aging under flower veil in the traditional oak casks for a minimum average time of 8 years to continue, naturally, 4 more years, in oxidative aging until reaching the hearth from where the "take out" is made for consumption. It is a dry amontillado, just with full-bodied acidity and a very elegant and persistent character on the palate. An amontillado tremendously expressive and not easily forgotten.
