El Alain Graillot Crozes-Hermitage Cold macerates with the skins for 2-5 days and then ferments at a controlled temperature and long macerates with the skins in cement tanks for between 15 and 21 days. Once it has fermented, the wine is aged for 12 months in oak barrels, 10% of which are new, and in demi-muits, large 600-liter barrels. It is filtered slightly before bottling but it is not clarified.
