Colosia Pedro Ximenez is a sweet wine made in the DO Jerez.
It is made by raisining the grapes under the method del Sunning that consists of spreading the grapes and letting them dehydrate in the sun. In this way the sugar is naturally concentrated and a sweet wine is obtained.
