Merlet C² Café & Cognac combines knowledge del Merlet's liquor and distiller, highlighting two "after-meal" classics. Merlet partnered with a roaster in his region, Merling in La Rochelle, to select the origin and variety of coffee (Arabica from Brazil) and work directly on freshly roasted coffee beans. Roasted and ground coffee del day it is immediately infused in hot water. The resulting aqueous coffee brew is stabilized by adding excess alcohol and then filtered. Then the cognac is mixed, which represents a minimum del 50% of the alcoholic ingredients. Finally, sugar is added to obtain the final liquor. The aromatic intensity is exceptional, and the moderate sugar content maintains the natural bitterness del coffee, for a pure or ice tasting. There are many other applications.
