Sherry wines are mainly divided into two categories: fortified wines and sweet wines.

Generous Wines: Within this category, we find several subtypes:
- Fino: A dry and light wine, which develops under a layer of flor, a type of yeast that protects the wine del oxygen.
- Chamomile: Similar to Fino, but produced in Sanlúcar de Barrameda, with a more saline character.
- Amontillado: It starts out as a Fino, but undergoes oxidative aging, giving it a more complex and nutty flavor.
- Oloroso: This wine does not form flor and is oxidized from the beginning, resulting in a more robust and aromatic wine.
- Palo Cortado: A rare wine that combines the characteristics of Amontillado and Oloroso, offering the best of both worlds.

Sweet wines: These wines are made from raisins, which gives them a natural sweetness:

- Pedro Ximénez: An extremely sweet wine, made from sun-dried grapes, offering intense notes of raisins and caramel.
- Cream: A sweet wine that is usually a blend of Oloroso and sweet wine, with a balanced profile.
